You can tailor your spice choices to taste or even your mood on a given day. This is where the fun lies. There is no end to combinations and it is easy and affordable to buy in bulk. Spices can last up to a year whether in dry, powdered, or seed form, so why not indulge.

If you want to add character to your food, go all out. More and more people are demanding "spicy" food. They want the variety, novelty, and flavor. You can make little sachets, for example, for braising meat out of cheesecloth or coffee filters filled with pickling ingredients.
